Talking about sustainability is a complex and multifaceted matter, one that is difficult to summarise in a few parameters or, indeed, in a set of standard, repeatable procedures as if they were a recipe. Sustainability involves, first and foremost, observing the environment, its characteristics, its challenges and its responses. Every terroir – understood as the sum of territory, climate and the human factor – represents a unique entity with which human beings must interact, taking into account the different realities through their defining characteristics, which are always diverse and always surprising.
This is why a production choice based on organic farming is certainly a valuable ally, but it is not the sole or only aspect capable of meeting the demand for sustainability that the planet is calling for with an ever-louder voice.
